Noma became the best restaurant in the world by experimenting with local ingredients to create a unique dining experience. This dish that we enjoyed (one of many at our dinner) was called the Hen and the egg.

Traditionally, Britain has been a leader in this space. This lead is attributed to their more principle based approach versus the rules based approach in the US.
